The Almased Diet is a supplement powder used as a meal replacement. One component of the diet is their recipe for vegetable broth. Dieters prepare the fresh broth, and have 2 cups for snacks. Simple to make, perhaps you would like to cook up a batch to supplement the Almased diet, or another diet of your choice.
Almased Diet Vegetable Broth
1 Tablespoon olive oil
1 ½ pounds vegetables
1 leek stalk, 2 carrots, 1 celery, ½ cauliflower head, 2 bunches broccoli,
or any other fresh or frozen vegetables
Wash and cut up the vegetables. Heat oil in a large pot and sautee the vegetables for a few minutes. Add 8 cups of water and let simmer for 45 minutes. Strain out the solid pieces. Season with fresh herbs, pepper, and a little salt.
